This qualification reflects the role of highly skilled senior managers who use a broad range of hospitality skills combined with specialised managerial skills and substantial knowledge of industry to coordinate hospitality operations. They operate with significant autonomy and are responsible for making strategic business management decisions. This qualification provides a pathway to work in any hospitality industry sector and for a diversity of employers including restaurants, hotels, motels, catering operations, clubs, pubs, cafés, and coffee shops. This qualification allows for multi-skilling and for specialisation in accommodation services, cookery, food and beverage and gaming.

The qualification provides a pathway to work as:
• area manager or operations manager
• café owner or manager
• club secretary or manager
• executive chef
• executive housekeeper
• executive sous chef
• food and beverage manager

• motel owner or manager
• rooms division manager


Option 1 – 26 weeks at 2 contact days per week
Option 2 – 52 weeks at 1 contact day per week


Face to face classroom and practical environment – 2 contact days per plus 4 hours directed self-study per week.


Units of competence will be assessed using a selection of tools, portfolios, essays, reports, role-plays, practical observations, case studies, questioning, simulation activities and written tests

This is third time of school what I have done. First was TAFE, second was APSI. Compare with those school and have feedback from my friends who enrolled in other school, I am most happy with this school EEI. This is because the trainer whose name is Premita is very professional to teach skill and explain very well for our understanding. Also, she always checks our assessment one by one and give us knowledge of our study. I feel like that I study perfectly and proud of my improvement of my knowledge.
